Ingredients

Crust

  • 1 1/2 cups organic walnuts, chopped
  • 1/2 cup dried organic hibiscus leaves
  • 1/4 cup frozen organic cherries, thawed
  • 6 pitted organic medjool dates

Filling

  • 6 pitted organic medjool dates
  • 1/2 cup hot water
  • 1/4 cup dried organic hibiscus leaves
  • 1/2 cup frozen organic cherries, thawed
  • 3/4 cup organic almond milk
  • 1/4 cup arrowroot starch
  • 1 tsp organic pure vanilla extract, non-alcoholic
  • 1 1/2 cups organic walnuts, chopped
  • 1/8 tsp sea salt

Topping

  • 1/4 cup organic walnuts, chopped
  • 1/4 cup frozen organic cherries, thawed and chopped

Instructions

  1. Preheat the oven to 350F.
  2. Soak 6 dates for the filling in 1/2 cup hot water with 1/4 cup hibiscus leaves. Set aside to soak for 20 – 30 mins.
  3. Line 8″ x 8″ square baking dish with 2 pieces parchment paper going up the walls of the dish.
  4. For the crust, combine all the ingredients in a blender or food processor.
  5. Press crust firmly and evenly into the dish and set aside. No need to clean the blender pitcher before moving on to the filling.
  6. For the filling, blend the soaked dates, the soaking water, and hibiscus with all the remaining filling ingredients until smooth.
  7. Pour filling on top of the crust and spread evenly.
  8. Sprinkle the remaining 1/4 cup of chopped cherries and 1/4 cup chopped walnuts on top. Press in slightly so they stick into the filling a little.
  9. Bake for 40 – 45 minutes at 350F or until the top turns a purple color and walnuts on top are golden brown.
  10. Remove from the oven. Let cool completely, then refrigerate overnight.
  11. Keep refrigerated until ready to serve, then slice into 16 squares and enjoy!
