Cheerful Cherry Berry Beet Carrot Slaw

Ingredients

Salad

  • 1 red beet (yields about 2 cups julienned)
  • 3 whole carrots, julienned (yields about 1 1/2 cups julienned)
  • 1/2 cup blueberries, plus some to garnish

Dressing

  • 1/2 cup dark sweet red cherries
  • 3 tbsp lemon juice
  • 1/8 tsp sea salt, to taste

Use all organic ingredients if possible, especially the berries which are on the 2023 dirty dozen list.


Instructions

  1. Rinse berries thoroughly and let dry. If you’re using frozen cherries or blueberries, take out of freezer and let thaw completely before using.
  2. Rinse and pat dry beet and carrots.
  3. Peel beet and slice into quarters. Leave carrots unpeeled.
  4. Using mandolin slicer, julienne the beets and carrots. Add to medium bowl and set aside.
  5. Add cherries, lemon juice, and salt to blender and mix until smooth. Set aside.
  6. Add blueberries to bowl with beets and carrots then pour dressing into bowl.
  7. Gently mix until well combined. Serve and enjoy!

Notes

Store refrigerated in air tight container. Keeps for 2-3 days.

You may want to use an apron and gloves for the beets, unless you like bright pink stains :-)
