In this fresh slaw the cheer comes not only from the flavor but the color! You can’t help but smile seeing the bright orange carrots, vibrant deep magenta beets, the rich red cherries, and the deep blue blueberries.
Then you take a bite and the fresh flavors pop in your mouth… tart lemon and berries paired with savory beets and carrots. I would have called it magic slaw but cheerful sounds better with cherry.
The complimentary blend of the tart berries and savory root veggies is what makes my take on beet carrot slaw extra special, and that there is no added sugar, oil, or vinegar here.
You can use fresh berries in season, or frozen berries, or a mixture of both like I do. For the dressing I prefer to use frozen cherries, but fresh blueberries on the salad. Either way, you’re going to enjoy this vibrant dish loaded with antioxidants and anti-cancer compounds.
Special Tools Needed
Mandolin Slicer — unless you really enjoy, and have the time to julienne carrots and beets with a knife, I highly recommend getting a mandolin slicer to do the job.
Immersion Blender or regular Blender — this will make mixing up your dressing a breeze.

Ingredients
Salad
- 1 red beet (yields about 2 cups julienned)
- 3 whole carrots, julienned (yields about 1 1/2 cups julienned)
- 1/2 cup blueberries, plus some to garnish
Dressing
- 1/2 cup dark sweet red cherries
- 3 tbsp lemon juice
- 1/8 tsp sea salt, to taste
Use all organic ingredients if possible, especially the berries which are on the 2023 dirty dozen list.
Instructions
- Rinse berries thoroughly and let dry. If you’re using frozen cherries or blueberries, take out of freezer and let thaw completely before using.
- Rinse and pat dry beet and carrots.
- Peel beet and slice into quarters. Leave carrots unpeeled.
- Using mandolin slicer, julienne the beets and carrots. Add to medium bowl and set aside.
- Add cherries, lemon juice, and salt to blender and mix until smooth. Set aside.
- Add blueberries to bowl with beets and carrots then pour dressing into bowl.
- Gently mix until well combined. Serve and enjoy!
Notes
Store refrigerated in air tight container. Keeps for 2-3 days.
You may want to use an apron and gloves for the beets, unless you like bright pink stains :-)
