A healthy take on a classic favorite. Most coleslaw recipes call for (way too much) sugar, and mayonnaise.

Depending on the mayo that you get, they are generally made from inflammatory bad oils such as soybean, sunflower, canola, and some have added “natural flavors.”

Also traditionally eggs are used to make mayo, so unless it says vegan on the label it’s not.

My recipe skips the mayo and sugar altogether.

Instead, I use organic coconut yogurt (plain, unsweetened by So Delicious) to get that creaminess, keeping it vegan and paleo. Pair it with red wine vinegar or apple cider vinegar for tartness, and acetic acid to help control blood sugar spikes.

Rather than celery salt that most classic coleslaw recipes include, I’m using real fresh celery to round out the flavor. And flavor is definitely not this slaw is missing.

Seasoned with organic dried onions for savory flavor, a little sea salt and pepper, and now we have a winning slaw dressing.

Classic Coleslaw No Mayo (Vegan + Paleo)

Ingredients

Salad

  • 1/4 organic green cabbage (yields about 2 cups julienned)
  • 2 organic whole carrots (yields about 1 cup julienned)

Dressing

  • 1/4 cup organic coconut yogurt, plain unsweetened
  • 1/4 cup red wine vinegar or organic apple cider vinegar
  • 1/2 stalk organic celery
  • 1/2 tbsp organic dried chopped onion
  • 1/8 tsp sea salt, to taste
  • 1/8 tsp black pepper, to taste

Instructions

  1. Rinse and dry unpeeled carrots.
  2. Using mandolin slicer, julienne the carrots and cabbage. Place in mixing bowl and set aside.
  3. Mix yogurt and vinegar in small bowl until smooth.
  4. Add remaining dressing ingredients and mix thoroughly.
  5. Pour dressing over cabbage and carrots. Stir, serve and enjoy!

Notes

Can be made ahead of time, but I don’t recommend adding the dressing more than a few hours before serving  for extra crispiness.
Store refrigerated in air tight container. Best if used within 2 days.
