Cool and tart, my cucumber green apple salsa is a refreshing dip with no nightshades. That’s right, no tomatoes are used here.
You’ll see I don’t use a lot of tomatoes (or nightshades in general) in my recipes. There is discussion about them being inflammatory, yet it seems to be no scientific evidence to support that they are inflammatory. So that’s good new for those of you that like tomatoes!
Tomatoes tend to be acidic though, so for those with acid reflux issues or ulcers they are generally not recommended.
Here we are going green using cucumber as our primary ingredient, paired with tart green apples — which of all apple varieties generally has a lower sugar content.
We’re adding in the classic salsa herb cilantro. As part of the parsley family cilantro is anti-inflammatory and has antioxidant activities. And finally the onion + garlic both have anti-cancer properties, and really this would not be salsa without onions and garlic!

Ingredients
- 1 organic cucumber, diced
- 1 organic granny smith apple
- 1/4 medium organic yellow onion
- 3–5 cloves organic garlic
- 1/4 bunch fresh organic cilantro
- 1/4 cup lemon juice
- 1/8 tsp each salt + pepper to taste
Instructions
- Rinse cucumber, apple, and cilantro thoroughly and pat dry.
- Dice cucumber and place into medium mixing bowl.
- Cut apple into quarters, remove core, and dice into small pieces about the same size as the cucumber. Set aside 1/3 of the diced apples, and add remainder to the bowl with cucumbers.
- Finely chop cilantro and add to bowl with cucumbers and apples.
- Add 1/4 cup lemon juice, salt, and pepper to cucumber apple mix, and mix briefly to combine. Set aside.
- Mince 3-5 cloves of garlic, and place into small prep bowl.
- Meanwhile finely dice 1/4 yellow onion, place in another small prep bowl, keeping separate from garlic — we’ll be cooking these with the reserved apples and garlic but in sequence.
- Heat 1 tsp olive oil medium skillet on med low.
- Add onions only and cook for about 2 minutes until slightly translucent.
- Stir in reserved apples and cook with onions for 1 minute.
- Stir in minced garlic to cook with onion/apple mixture for 1 minute, then remove from heat.
- Let the onion, apple, garlic cooked mixture cool about a minute then add it to apple and cucumbers in mixing bowl.
- Gently stir to mix everything together.
- Serve immediately, or refrigerate for about 1 hour for a more chilled salsa. Enjoy!
